By default, the main story as presented in the in-game timeline of Dragonfable's Book of Lore are visible.
Side Quests are questlines that are not part of the main story, but are visible on the timeline.
Optional Quests are quests that are not visible on the timeline.
Finally, Seasonal quests are content that are generally not available all year round, unless you own the Storybook Collection house item. The large majority of seasonal events are completely disposable: they're often irrelevant, and very self-contained. Skipping seasonal events would generally not hurt your understanding of the story by any means.
Staff in the past often disregarded chronology when pushing seasonal content. As such, most of them don't have an exact spot to be in the storyline. It is advised to play through them with a high suspension of disbelief, while also ignoring the fact that there's supposed to be a year between chapters.

If a quest is truly irrelevant, offers no story at all, no character development, doesn't add to anything, and is generally not worth your time, then it won't be included.

Yes. There's a profile feature where you can create, edit, delete, import and export your own profiles. You can find it by clicking the gear icon on the top right.
Changes are saved on your browser's cache. Clearing your cache will also clear your saved changes. Alternatively, you can export profiles and save them on your computer.
